With the addition of some clever condiments and thanks to the grill, you can easily make healthy, filling, and impressive salads. “Grilled vegetables and lean proteins add body to these recipes, but without any excess bad fat,” says Denver-based recipe developer Julia Heffelfinger. “Each dish is finished with either a zesty dressing, a creamy protein-packed yogurt, or a dusting of crunchy seeds and spices.” Pro tip: Make your vinaigrette and prep your vegetables and herbs ahead of time, then toss everything together grill-side so you can dine al fresco.
