So New York City–based recipe developer Laura Rege created three two-serving dishes that lend themselves perfectly to a leisurely meal shared on a tray.

These riffs on traditional breakfast foods—frittata, yogurt parfait, and waffles—are special enough for a celebration but healthy enough for everyday. Make them ahead of time, so even if you have an early morning, you can spend more time in bed.
