Early summer heralds the arrival of strawberries, which are high in vitamin C and antioxidants, and said to possess anti-inflammatory properties. “Strawberries contain calcium, magnesium, and potassium, as well,” says Bethany Snodgrass, holistic health coach and New York City–based operations manager at the Equinox Fitness Training Institute. The complex flavor of the berry also makes it an excellent ingredient in savory recipes. New York City–based recipe developer Beth Lipton created three nutritious dishes showcasing the fruit, including a salsa served with roasted fish, a bright gazpacho, and a dressing drizzled over a salad of greens, grilled chicken, radishes, and more strawberries.
