In honor of the upcoming Equinox Explore trips to Morocco, Brooklyn-based recipe developer Ali Slagle devised three colorful, summery entrées that highlight the earthy spices used frequently in the North African nation. (Stay tuned to Furthermore for updates on how to sign up for the trips, coming soon.) “When you make dishes that are full of really flavorful ingredients like spices and herbs, you have a tendency not to rely on less nutritious crutches like sugar, salt, and fat,” explains Slagle.

For a hearty salad crafted from all sorts of red fruits and vegetables, she includes a zingy dressing starring the fragrant ras el hanout spice blend. She serves slow-roasted salmon with a tomato chermoula—a traditional sauce in the region—accented by cumin and coriander. Ground lamb is seasoned thoroughly with za’atar, a mixture of sesame seeds, dried thyme, and other herbs, before being formed into burgers.
