Inspired by the Blue Zone isle
“I love using this marinade for vegetables, seafood, beef, and pork chops,” says New York City–based recipe developer Laura Rege. The flavors are inspired by Sardinia, a mountainous Italian island, where the cuisine favors bold ingredients like lemon zest, capers, and red pepper flakes. “Use whichever herbs you have on hand or prefer—it’s a very adaptable recipe,” she explains. For seafood, marinate for 15 to 30 minutes, for vegetables, 30 minutes to one hour, for pork, 30 minutes to two hours, and for beef, one to four hours. Rege also recommends steeping feta cheese in the mixture or trying it as a sauce or dressing.

Step 1
Combine the herbs on a cutting board and finely chop or, alternatively, crush together using a mortar and pestle. Transfer the herbs to a large ceramic or glass bowl or dish. Stir in the remaining ingredients. Set aside half of the marinade for serving, cover, and refrigerate. Marinate vegetables or protein in the original bowl, flipping a few times to ensure even marination.
Step 2
Before cooking, let excess liquid drip off vegetables or protein, gently remove clumped herbs, and lightly season with salt and pepper. After cooking, serve with reserved marinade spooned over top.
