“Thyme brings a savory edge to this bark,” explains New York City–based recipe developer Beth Lipton. The herb balances the sweetness of the fruit and the tangy, rich yogurt. Blueberries can help with lung function and endurance while yogurt is a significant source of calcium and probiotics. Add more or less honey depending on the tartness of your yogurt and berries and serve the bark as soon as possible, as it melts quickly. “If you like, sprinkle another nut or even granola on top instead of pistachios,” says Lipton.

Step 1
Line a rimmed baking sheet with parchment paper. In a medium-sized bowl, stir together yogurt, honey, salt, and vanilla until well combined. Transfer one-third to a blender or small food processor and add ½ cup berries and thyme. Blend until smooth.
Step 2
Spread yogurt mixture on the parchment paper, alternating strips of white and blended berry yogurt. Spread to about ¼-inch thickness. Use a butter knife or small spatula to swirl colors together in a marbled pattern. Sprinkle with nuts and additional berries, if desired.
Step 3
Freeze until firm, at least 3 hours. Remove from parchment, break into pieces, and serve immediately.
