This deceptively simple jam makes a perfect accompaniment to cheese and crackers, grilled meats, or herbed shortbread, says New York City–based recipe developer Beth Lipton. Unlike other jams which are laden with preservatives and added sugar, this one plays off the sweetness of summer tomatoes. The recipe can be doubled or tripled for a larger batch.

Step 1
Place all ingredients in a medium saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until most of the liquid has evaporated and the mixture is thick and jammy, about 75 to 80 minutes.
Step 2
Remove from heat and let cool. Transfer to a jar, cover, and refrigerate. Store for up to two weeks.
