A bountiful selection of salumi, cheese, and more
The French word 'charcuterie' refers to prepared meat products, so the classic meat and cheese board contains an array of carnivorous offerings. This one, which serves four to six people, includes prosciutto cotto (a cooked version of the Italian ham) along with bresaola (air-dried, salted beef), prosciutto di Parma, and a dried salami. There's also a soft, aged goat cheese, Parmesan, and Spanish Manchego. Miniature pickled peppers, mustard, and mostarda, a jam-like, slightly spicy Italian condiment, add a note of acidity to the richness of the other ingredients. Figs and grapes provide sweetness, while there are Marcona almonds and artisanal crackers for crunch. Sliced baguette completes the board.
