These cooking projects celebrate the late-fall ingredient.
A member of the brassica family (which also includes bok choy, broccoli, Brussels sprouts, and kale), cabbage is rich in fiber, vitamin C, and micronutrients known as polyphenols. Though the cruciferous vegetable is used in a number of global cuisines, it's often overlooked among the seasonal bounty. These recipes celebrate the versatility of the ingredient, which can be served in numerous ways, including raw, braised, roasted, and sautéed. New York City–based recipe developer Beth Lipton devised three inventive dishes featuring cabbage: stuffed with turkey and cauliflower rice, (inspired by the traditional Eastern European preparation), shredded and folded into batter for okonomiyaki (a Japanese snack), and sautéed with onion for a filling frittata.
Because of its hardy composition, the vegetable can take a bit longer to prepare, but you'll reap the benefits—both in terms of flavor and nutrition—in the end.
