Large-format holiday dishes are often prepared with unhealthy (and unnecessary) ingredients. Furthermore tasked Brooklyn-based recipe developer Ali Slagle with creating three elegant, sumptuous roasts and sides without the use of additional fat or processed sugar. Her innovative recipes include salmon with beets in two ways, herb-infused lamb shoulder and chickpeas, and an upgraded rib roast with braised greens.
