Artichokes are a quintessential spring ingredient with a host of health benefits. Rich in antioxidants, they support gut, liver, and gallbladder health. But, even accomplished home cooks often steer clear of the vegetable in fear of the prep work. New York City–based recipe developer Beth Lipton created three recipes to celebrate artichokes, which are versatile and, it turns out, simple to cook.
